A wiki about SNES development can be found at
http://wiki.superfamicom.org.

SFCwiki is awesome, but I'd start reading
http://en.wikibooks.org/wiki/Super_NES_Programming first if we're talking about learning from the ground.

There is some information about the SuperFX Opcodes, as well as a compiler somewhere in this
off-site thread. Although the thread is mostly tailored to SMW hacking, there is general information about the SuperFX in it too. (
Sample SuperFX code in Super Mario World)
There is also the
SD2SNES: a flashcart that emulates most SNES enhancement chips (but not SuperFX

), as well as provides a special homebrew chip solution called the MSU-1. The MSU-1 is essentially the spiritual successor of the unreleased Sony SNES-CD; it allows mass storage of CD-quality audio and FMV capabilities.
However, one must learn how to crawl before he walks; you should get some experience in vanilla SNES ASM/programming first
